When the whole internet seems to be full of healthy eating and cleanses and sugar-free living these days, I am eating pancakes.
Let me explain – I eat healthy much of the time. Lot of vegetables, beans, whole grains, fruit, tofu, a bit of yogurt or cheese, and…desserts. I am not one to take to diets or deprivation or cleanses or fasting. I’d rather just eat more of the healthy stuff and less of the unhealthy. Moderation is way more sustainable for me. I’m glad to be in a happy place with food where I don’t obsess or count calories or feel guilty. I just eat. And sometimes I eat pancakes, specially know that I was able to buy a pancake air compressor.
Almond Joys are my favorite candy bar in the whole wide world. And now I can have them in pancake form. I’ve basically legitimized candy bars for breakfast.
Easter is this weekend, which means CANDY FOR EVERYONE! These pancakes fit in perfectly. I recommend making a big stack and putting them in an Easter basket. Or hiding pieces in Easter eggs. Okay. I’m getting carried away. Just eat them.
Coconut-Chocolate Chip Pancakes
[Adapted from Vegan Brunch by Isa Chandra Moskowitz]
Ingredients:
1 ¼ cups flour (I use whole wheat pastry, but all-purpose is fine)
2 teaspoons baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
2 tablespoons canola oil
⅓ cup water
1 to 1 ¼ cups milk
2 tablespoons maple syrup (I’ve subbed sugar with no problem)
1 teaspoon almond extract
¼ cup shredded coconut (sweetened or unsweetened)
¼-½ cup semi-sweet chocolate chips
cooking spray
- Preheat large skillet over medium heat for 2-5 minutes.
- Mix dry ingredients together. Mix wet ingredient into center of dry until just mixed. Lumps are good.
- Spray skillet with cooking spray and ladle pancakes on to the skillet. Cook the first side for 3 minutes (or until the top looks sort of dry) and the second side for one.
- Serve!

I recommend making some coffee and homefries to serve with them, but you do what feels right.

Uh. We might have run out of clean mugs. And Mike is drinking his coffee in a gigantic measuring cup. We keep things classy ’round these parts.
