This week is all about comfort food. All three of us have colds, are sleepy, and the weather has decidedly taken a turn for the chilly, so I’m doing our favorite foods this week.
A few of us have a little “vegetarian collective” Facebook group that I’ve loved getting to see what others are eating and making, so I decided I’ll share on here every once and awhile. Meal planning is now done while Gabe and I watch MasterChef Junior now. CUTEST SHOW.
Here’s what we’re eating this week:
Monday: Tacos with roasted broccoli. My favorite thing is putting roasted veggies with whatever beans and/or TVP we’re cooking for our tacos. SO good.
Tuesday: Tempeh meatloaf (from Everyday Happy Herbivore) with crash hot potatoes. Healthy dose of sriracha on the side.
Wednesday: Hoisin tofu lettuce wraps.
Thursday: Grilled cheese and tomato soup – we got some smoked cheddar and havarti with roasted peppers in our CSA last week. Perfect for grilled cheese.
Friday: Going to West Virginia! (Yep, taking Mike and Gabe to see the farm I spent a week at last summer and going with some of my now-former coworkers!)

I love seeing what others are eating :) My favorite thing with tacos is sweet potato- I just cook them in the microwave and stick a huge chunk right into my taco. So yummy.

Oh we had grilled cheese made with gouda tonight and tomato soup . . .yum!

OK, so I want to start meal planning — especially for lunches during the week. Any advice on how/where to start?!

I usually make a list of what’s in the fridge, then get my cookbooks and look for something good.
OR just think about what sounds good. :)
After the CSA is over, I’ll go back to just stocking my pantry/fridge with our staples – which makes meal planning easier. Sometimes I like to plan, other times I like to be spontaneous.

My wife had Diabetes while pregnant that we had a little bit of trouble managing. But, it is managable. It was hard for her because she was hungry for certain high sugar/carb items. She ate a lot of vegetables that were sweeter–ie) beets, but they were not off the charts bad. After the baby, she was about 30 lbs. over weight, which is typical.
MUCH of the information here is what we used to help her with the weight. Really liked the lettuce wraps.
We were able to work together so that she lost the weight. In the meantime, I took on a career as a weight loss adviser and fitness trainer–who knew? :) All thanks to my lovely wife and daughter.
