Since I love seeing other family’s meal plans and budget-friendly meals are my jam, I thought I’d share what we have cooking every now and then in case anyone else loves finding recipes that are good. (Full disclosure: I won’t do it often since we often eat the same things several times a month.)
We tend to eat vegetarian, leaning towards vegan but with a good mix of frozen pizza or veggie burgers every now and then.
I love cooking and eating healthy food (with brownies for dessert for balance), but I do not love spending hours every evening in the kitchen cooking and cleaning. Ideally, I prep a little on the weekend, then just cook big batches 2-3 times a week. I don’t plan meals for every night of the week – I’d burn out so quickly. I also don’t plan a month at a time – I’m too spontaneous for that. So I usually plan for a few meals and the rest are leftovers, eating out or at someone’s house, or something from the freezer or snacky dinner (nachos!).

Perhaps it’s the snow falling outside, but I’m in the mood for soup and chili this week!
Curried cabbage with peas and masala baked tofu: Incredibly healthy – the cabbage and peas are full of iron and protein (seriously!), so this is a rather virtuous meal. I just gotta remember to marinate the tofu!
Caldo verde with crumbled tempeh (greens, potatoes, and crumbled tempeh): This stuff is AWESOME. I cannot find the recipe online. But OMG it’s sooooo good.
Chipotle chili with sweet potatoes and brussels sprouts: Chili with sweet potatoes and brussels sprouts? Who knew!
Looking for the links to these recipes, which are all from Appetite for Reduction (my go-to sources for recipes when I’m trying to eat a little better), led me to a very exciting discovery:
Yep, you don’t have to buy the cookbook, you can just go here and search for the recipes or ingredients you want. And there are tons of cookbooks on Google Books! I’m totally excited about this. Cookbooks! Whee!

One of my favorite meals when it’s cold out: taco soup! You could probably substitute tofurkey for the ground turkey I use, the rest is all veggies and beans (tomatoes, corn, pinto beans, taco seasoning, ranch seasoning and water). it’s simple, perfect with tortilla chips and some cheese AND it makes a ton of leftovers!

That is my absolute favorite cookbook! We eat Forty Cloves and Chickpeas once a week.
